Budget snacking 1 - Boiled Salted Peanuts

Raw peanuts are about $2 a pound in a local Mexican market.

Soak 1/2 a pound of peanuts for 2 hours. Add 6 cups of water in a pressure cooker with 2 spoons of salt and the soaked peanuts. Cook until 4 whistles on an Indian pressure cooker.

After an hour, the peanuts are ready to eat. This is about 5 servings of peanuts. They can be refrigerated for up to 5 days. They can also be kept out for about a couple of days.

Boiled, salted peanuts stay in my stomach for about 3 hours. Of course, they are an awesome source of gas. That might be because I am allergic to something within the peanuts. But then again, as long as I am not irritating my cube mates - peanuts are awesome!

At $1 per 5 servings and the cooking time and energy this is a tasty and probably the most budget friendly snack.
